Saturday Pancakes

 


We made pancakes today, so I thought I would share my recipe. (I don't have a photo of my pancakes, so you get a stork's nest instead.)

2 cups white whole wheat flour (I love this flour. It’s whole wheat with a consistency more like white. If you can’t find it, use ½ whole wheat and ½ white.)
½ teaspoon salt
1 teaspoon baking soda
1 ½ teaspoons baking powder
2 eggs (I use large or extra large)
3 tablespoons vegetable oil (I use canola)
2 cups buttermilk to start and more if necessary to get the right consistency

Mix the dry ingredients. In a separate bowl, mix the eggs, oil, and 2 cups buttermilk. Mix the wet and dry ingredients together. Add more buttermilk to get the consistency you like for pancake batter. You may have to add more buttermilk later, as the batter may thicken a little.

I am no great shakes at anything done in a frying pan, so I won’t offer advice. Hopefully you or someone you know is good at it. This morning’s worked fine, but I give the credit to luck. :)

These are also nice with broken nut pieces (pecans or walnuts), which can be added to the batter or dropped onto the pancake just after the batter is ladled into the pan.

This should feed about 4 people, more or less...

We use various syrups according to taste – Maple Grade A, Maple Grade B, or Agave. All good!
